Melon Stuffed – Served on the wedding of Kanuni Sultan Süleyman Şah – Cihangir and Beyazıt

Stuffing melon is not a common dish in today’s Turkish cuisine, but it is like many fruit dishes and stuffing. The melon stuffing, which has an important place in the 15th and 16th century Ottoman palace cuisine, is a magnificent meal made in the second half of November 1539 and served in the dish of the sunni wedding of Kanuni Sultan Süleyman, Şah Cihangir and Beyazıt. It is also an indication that dessert and salty are used together in Ottoman cuisine.

Ingredients

 

    • 4 small sweet melons
    • 1 coffee cup rice
    • 1 tablespoon butter
    • 1 medium onion
    • 400 gram beef mince
    • 100 gram unsalted
    • peeled almonds
    • 1 teaspoon rosemary
    • 1 teaspoon currants
    • 1 teaspoon pistachios
    • Half a bunch of chopped
    • dill and parsley
    • Salt To
    • decorate Salt :
    • 100 grams of butter
    • 5-6 sprigs of parsley
    • a pinch of red pepper flakes

 

How to Prepare?

Wash RICE, boil in brine and set aside. Melt the butter and pink the onion that you chopped. Add the minced meat. After roasting for a few minutes, add the remaining ingredients and cook together for 5 minutes. Add the boiled rice to the mixture and turn for 2-3 minutes. Remove the tops of melons and empty them with a spoon, not too thin. You shared the inner mortar to melons. Bake in a preheated 200 degree oven for 15 minutes. Put the butter in a pan and sauté the pieces coming out of melons. Add parsley and chili pepper. Put the prepared melon mixture next to the stuffed and serve.
