
08 Jan Helva-i Hakani From Ottoman Cuisine
A man who eats this halva made with rose water cannot forget it again.
Ingredients

- 200 grams of butter or margarine
- 1 cup of flour
- 1 cup of rice flour
- 1 cup of starch
- 3 cup of milk
- Two and a half cups of powdered sugar
- 100 grams of coarse walnuts
- Half a coffee cup of rose water
How to Prepare?
Let’s take the oil in 1 pot and melt it. Let’s add the flour and 1 cup of rice flour, stir it over a slow fire and stir constantly.
Let’s add 2 cups of starch on it and lightly brown it until it has a licorice and continue stirring constantly.
3 Then add the boiling milk and let the halva pull the milk without interrupting the mixing.
4 Let’s add and mix the sugar. After adding the crushed walnut and mixing it once, let’s take the halva from the fire. Let’s steep for 15-20 minutes. Let’s take it to the service plate and let the rose water be poured on it according to the desire. Let’s serve.
