12 Jan Acem Pilavi – Famous Recipes of Kahramanmaraş Region
Acem pilaf, which is among the famous recipes of Kahramanmaraş region, may seem a little complicated at the beginning, but you will not get enough of its taste. Beginning with a roasted meat and pine nuts added to it, the novice pilaf, which is almost a masterpiece, definitely remains in the taste buds.
- 1 Kg cubed lamb meat
- 2 cups rice
- 3 tablespoons – 3 teaspoons butter
- 1 onions, 2 carrots
- 3 cups broth
- 1 tea glasses almonds, salt
- 1 tea glasses pistachio
How to Prepare?
Firstly, soak the rice in salted warm water for 15 minutes and drain. After washing with plenty of water, set aside to drain. Melt 2 tablespoons of butter and fry the chopped onion. Add the broth and adjust the salt when it boils and add the rice. Cook the pot with the lid closed until it boils, then cook over low heat until it drains. On the other hand, fry the meat in 1 tablespoon of butter. Roast julienne carrots, almonds and pistachios in separate pans in 1 teaspoon of butter. Take the pilaf on the serving plate first and place the meat, carrot, almond and pistachio respectively. Serve hot.
